River Select Candied Wild Salmon Phyllo Pastry
Made with Wild Candied Fraser River Sockeye Salmon that has been selectively harvested
and sustainably managed by BC’s First Nations.
INGREDIENTS
5 pieces of River Select Candied Wild Salmon
4 Tablespoons of Ricotta Cheese or Ricotta Cream
Salt & Spices to taste
1/2 cup of green onions (or spring onions)
1 box of Phyllo Pastry Sheets
1 container of mini mozzarella cheese balls (bocconcini)
Butter (melted) or oil spray
DIRECTIONS
In a bowl, mix the candied salmon (diced) with the ricotta cheese, salt, spices and green onions.
FOR THE PHYLLO CUPS
Open the phyllo pastry carefully in on a clean table on top of a paper baking sheet,
cut into squares – * you don’t need to cut the whole pastry sheet at once,
and if you do cover the remaining pastry with a lightly wet towel to prevent it from drying and breaking.
Spray the muffin baking tray with oil spray or butter.
Put 5 or 6 layers of the square pieces of pastry into each space of the muffin baking tray –
Fill with 1/2 spoon of the candied salmon filling mixture and top with 1 ball of mini mozzarella.
Bake in medium heat until golden brown.
FOR THE PHYLLO TRIANGLES
Open the phyllo pastry carefully in on a clean table on top of a paper baking sheet,
cut into large stripes – * you don’t need to cut the whole pastry sheet at once,
and if you do cover the remaining pastry with a lightly wet towel to prevent it from drying and breaking.
At this stage, you can spray oil or brush melted butter to make the pastry softer and wet.
At one corner of the stripe, put the candied salmon filling mixture and top with 1 ball of mini mozzarella.
Roll in a triangle format, spray with oil or brush melted butter,
arrange the triangles in a cookie baking tray on top of a baking sheet.
Bake in medium heat until golden brown.
