River Select Wild Sockeye Salmon Pie
Made with River Select Wild Sockeye Salmon that has been selectively harvested
and sustainably managed by BC’s First Nations.
INGREDIENTS
3 cups of baby spinach (sliced for easy mixing)
3 tablespoons of green onions sliced
1 whole side piece of wild salmon fillet (skin off)
2 sheets of big size pie pastry
1 egg (for the egg wash)
Salt and seasoning of your choice.
DIRECTIONS
Mix baby spinach with 3 tablespoons of cream cheese plus the seasoning of your choice.
Place the whole Babine Select wild salmon fillet on a pie pastry and season it.
Add and spread the filling mixture of spinach and cream cheese.
Close the pie pastry and shape as a fish,
press with a fork to close it, use a small spoon to make the scales shape.
Brush with egg wash.
Bake at medium oven temperature (375 F) until golden brown.
Serve hot.
